This is the easiest apple cake recipe ever! One can also use other fruits like plums as an alternative.
Ingredients:
600g apples, peeled and sliced (I usually use Golden Delicious)
100g butter
140g sugar
3 eggs
1 teaspoon Vanilla essence
200g flour
2 teaspoons baking powder (the German one is fine)
Pinch of salt
1 tablespoon cinnamon sugar
Method:
Preheat oven to 175°C.
Beat the butter, sugar and vanilla essence for 4 minutes with a hand mixer on high speed. Add eggs one at a time and then add in the flour with baking powder and salt. Mix for another minute or so.
Grease a 26cm diameter cake tin and pour the mixture into it.
Arrange the sliced apples evenly in the baking tin and sprinkle the cinnamon sugar over it.
Bake for 30-40 minutes till golden brown. When it's ready, an inserted toothpick or fine skewer should come out clean.
