Spring Spargel Harvest Begins Slowly, Prices Expected to Drop

The onset of spring in Germany marks the gradual beginning of the spargel (asparagus) harvest, a culinary favorite that many associate with this season. Farmers across the country have commenced harvesting efforts, with particular focus on ensuring adequate supply for the upcoming Easter celebrations.

As warmer weather sets in, the volume of harvested spargel is projected to increase, leading to a decline in consumer prices in the weeks ahead. According to industry insiders, prices are already dropping in major markets, which bodes well for consumers looking to enjoy this seasonal delicacy.

However, current figures regarding harvest volumes remain limited as the season is still in its early stages. Analysts point out that the chilly nighttime temperatures have contributed to a slow start to the season, but they remain optimistic about sufficient availability by Easter.

Last year, spargel claimed the title of the most extensively cultivated vegetable in Germany, with an impressive 19,800 hectares dedicated to its growth, surpassing that of onions. Nevertheless, the previous year's harvest was notably low, marking the smallest yield since 2013. A total of 108,000 tons of spargel were harvested in 2024, reflecting a 3% decrease compared to 2023.

Fresh spargel is best enjoyed shortly after harvest, and consumers are encouraged to purchase it directly from producers or local markets for optimal flavor. Key indicators of quality include a slight sheen, firm texture, and aromatic scent. Minor imperfections such as brown spots, which may result from fungal growth, do not necessarily indicate poor quality.

When it comes to storage, white spargel should be kept in the refrigerator wrapped in a damp cloth and consumed within a few days. Conversely, green varieties can be stored upright in water to maintain freshness. For those who prefer pre-peeled spargel, it is crucial to keep it cool and use it on the same day to ensure quality.
